Ingredients

The dough

  • cups warm water
  • teaspoons instant or active dry yeast
  • 1 teaspoon salt
  • 1 Tablespoon brown sugar or granulated sugar
  • 1 Tablespoon unsalted butter, melted
  • 3¾-4 cups all-purpose flour

Baking soda bath

  • ½ cup baking soda
  • 9 cups water

Topping

  • to taste coarse salt

Instructions

  1. Whisk yeast into warm water and let sit for 1 minute, then mix in salt, brown sugar, and melted butter.
  2. Gradually add flour, mixing until the dough is thick and not sticky.
  3. Knead the dough for about 5 minutes until soft and slightly tacky.
  4. Shape the dough into a ball, cover, and let rest for 10 minutes.
  5. Preheat the oven to 400°F (204°C) and prepare baking sheets.
  6. Cut the dough into 1/3-cup sections and roll each into a 20–22-inch rope, shaping into pretzels.
  7. Boil water and baking soda, then boil each pretzel for 20–30 seconds before placing on baking sheets.
  8. Sprinkle with coarse salt and bake for 12–15 minutes until golden brown.
  9. Serve warm, optionally with spicy nacho cheese sauce.
