Ingredients

The pretzels

  • cup water
  • 2 quarts water
  • 2 tablespoons granulated sugar
  • 1 teaspoon granulated sugar
  • 1 packet active dry yeast
  • 3 cups all-purpose flour
  • ¾ teaspoon salt
  • 3 tablespoons butter
  • ½ cup baking soda
  • 1 egg yolk
  • 1 tablespoon water
  • Kosher salt or other coarse salt

The cheese sauce

  • 2 cups shredded cheddar cheese
  • 1 tablespoon corn starch
  • 1 (12 ounce) can evaporated milk
  • Salt and freshly ground black pepper

Instructions

  1. Bloom the yeast in warm water with sugar until foamy.
  2. Combine flour, salt, and remaining sugar in a mixer, then add melted butter and yeast mixture.
  3. Knead until the dough pulls away from the sides of the bowl and let rise until doubled in size.
  4. Preheat the oven and prepare baking sheets with parchment paper.
  5. Shape the dough into pretzels and twist them.
  6. Boil each pretzel in a baking soda water bath for 30 seconds.
  7. Transfer to baking sheets, brush with egg wash, and sprinkle with salt.
  8. Bake until dark brown and fragrant.
  9. Prepare the cheese sauce by melting cheese with cornstarch and evaporated milk.
