Homemade Soft Pretzels

Instructions
- Activate the yeast by mixing it with warm water and maple syrup, then let it foam.
- In a mixer bowl, combine flour, salt, olive oil, and the yeast mixture, mixing until a dough forms.
- Knead the dough gently, then place it in an oiled bowl, cover, and let it rise until doubled in size.
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Divide the dough into 8 pieces and roll each into an 18-inch rope, shaping them into pretzel forms.
- Prepare the poaching water by boiling water and baking soda in a large pot.
- Boil each pretzel for 30 seconds, then place them on the baking sheet and sprinkle with coarse salt.
- Bake the pretzels for 14 minutes or until golden brown.
