Ingredients

The dough

  • 2 tablespoons maple syrup
  • 1 pkg. (¼ ounce) active dry yeast
  • cups warm water
  • cups all-purpose flour
  • 2 teaspoons sea salt
  • ¼ cup extra-virgin olive oil
  • coarse to taste sea salt

The poaching water

  • 6 cups water
  • 2 tablespoons baking soda

Instructions

  1. Activate the yeast by mixing it with warm water and maple syrup, then let it foam.
  2. In a mixer bowl, combine flour, salt, olive oil, and the yeast mixture, mixing until a dough forms.
  3. Knead the dough gently, then place it in an oiled bowl, cover, and let it rise until doubled in size.
  4. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  5. Divide the dough into 8 pieces and roll each into an 18-inch rope, shaping them into pretzel forms.
  6. Prepare the poaching water by boiling water and baking soda in a large pot.
  7. Boil each pretzel for 30 seconds, then place them on the baking sheet and sprinkle with coarse salt.
  8. Bake the pretzels for 14 minutes or until golden brown.
