Ingredients

Dough Ingredients

  • 5 cups all-purpose flour
  • 2 teaspoons instant yeast
  • teaspoons salt
  • ½ cup sugar
  • cups warm water
  • 1 tablespoon neutral oil or olive oil

Finishing Ingredients

  • ½ cup baking soda
  • 4 cups hot water
  • to taste kosher salt
  • 4 tablespoons melted butter

Instructions

  1. Whisk together the flour, yeast, salt, and sugar in a large bowl.
  2. Add the warm water and oil, stirring until a shaggy dough forms.
  3. Knead the dough briefly until it feels tacky, about 1 minute.
  4. Let the dough rise in a warm spot for 1 hour.
  5. Preheat the oven to 425ºF.
  6. Divide the dough into 12 pieces and roll each into a log.
  7. Roll each log to 22 to 24 inches long and twist into a pretzel shape.
  8. Dissolve the baking soda in hot water.
  9. Dip each pretzel into the baking soda solution and place on a parchment-lined sheet pan.
  10. Sprinkle with salt and bake for 10 to 12 minutes until golden.
  11. Brush the baked pretzels with melted butter and transfer to a cooling rack.
  12. Serve warm.
