Instructions
- Mix flour, salt, sugar, instant yeast, and warm water in a stand mixer until combined.
- Knead the dough on a floured surface until smooth and elastic, then let it rise until doubled in size.
- Boil water with baking soda in a large saucepan.
- Divide the dough, roll into logs, and cut into bite-sized pieces.
- Boil the dough pieces for 30 seconds, then drain and place on a baking sheet.
- Sprinkle with kosher salt and bake at 400°F for 12 to 15 minutes until golden brown.
- For the cheese sauce, melt butter, add flour, then gradually whisk in milk and cheese until melted.
- Serve pretzel bites warm with cheese sauce.
