Ingredients

The dough

  • cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • teaspoons instant yeast
  • ⅞ to 1 cup warm water
  • 4 cups water (for boiling)
  • 2 tablespoons baking soda
  • 1 teaspoon kosher salt or coarse salt
  • 6 tablespoons unsalted butter (melted)

The cheese sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup sharp cheddar cheese (shredded)

Instructions

  1. Mix flour, salt, sugar, instant yeast, and warm water in a stand mixer until combined.
  2. Knead the dough on a floured surface until smooth and elastic, then let it rise until doubled in size.
  3. Boil water with baking soda in a large saucepan.
  4. Divide the dough, roll into logs, and cut into bite-sized pieces.
  5. Boil the dough pieces for 30 seconds, then drain and place on a baking sheet.
  6. Sprinkle with kosher salt and bake at 400°F for 12 to 15 minutes until golden brown.
  7. For the cheese sauce, melt butter, add flour, then gradually whisk in milk and cheese until melted.
  8. Serve pretzel bites warm with cheese sauce.
