Ham and Cheese Pretzel Bites

Ingredients

The dough

  • 1 package active dry yeast
  • 2 tablespoons packed brown sugar
  • ¼ cup warm water
  • 1 cup warm skim milk
  • 2 ¾ cups white whole wheat flour

The filling

  • 3 oz finely diced deli ham
  • 2 oz sharp cheddar cheese, shredded

The boiling solution

  • 6 cups water
  • 4 teaspoons baking soda

For finishing

  • 3 tablespoons unsalted butter, melted
  • to taste coarse salt

Instructions

  1. Combine warm water with one teaspoon of brown sugar and yeast, and let it stand until foamy.
  2. In another bowl, mix warm milk with the remaining brown sugar until dissolved.
  3. Once the yeast is foamy, add the milk mixture and flour to form a dough.
  4. Knead the dough on a floured surface and place it in a greased bowl, covering it to rise for 2 hours.
  5. After rising, divide the dough into four balls and the ham and cheese into four portions.
  6. Roll each dough ball into a rectangle, fill with ham and cheese, and roll tightly.
  7. Cut each roll into 12 pieces and place them on baking sheets to rest for 30 minutes.
  8. Boil water and baking soda, then boil the pretzel bites for 20 seconds each, draining them afterward.
  9. Bake the pretzel bites at 400°F for about 15 minutes until golden brown.
  10. Brush with melted butter, sprinkle with salt, and serve with mustard for dipping.
