Pork and Chive Dumplings

Ingredients

The dough

  • 2 cups all-purpose flour
  • ½ cup water

The filling

  • ½ cup Chinese chives, chopped
  • ½ pound ground pork
  • teaspoon salt
  • teaspoons Chinese Shaoxing wine or rice wine
  • 3 dashes white pepper powder
  • ¼ teaspoon sesame oil
  • to taste Chinese black vinegar

Instructions

  1. Mix flour with water and knead until the dough is soft, about 15 minutes.
  2. Divide the dough into two portions and roll each into a cylinder.
  3. Cover the cylinders with a wet towel and set aside.
  4. Prepare the chives by trimming off the roots and mixing with ground pork and other filling ingredients.
  5. Cut the dough into small pieces and roll each into a round wrapper.
  6. Place a spoonful of filling in the center of each wrapper and seal tightly.
  7. Boil water in a pot and drop the dumplings in, covering the pot.
  8. Once the dumplings float, remove them with a strainer and serve hot with black vinegar.
