Pork and Chive Dumplings

The dough

all-purpose flour

The filling

Chinese chives, chopped

Chinese Shaoxing wine or rice wine

Chinese black vinegar
Instructions
- Mix flour with water and knead until the dough is soft, about 15 minutes.
- Divide the dough into two portions and roll each into a cylinder.
- Cover the cylinders with a wet towel and set aside.
- Prepare the chives by trimming off the roots and mixing with ground pork and other filling ingredients.
- Cut the dough into small pieces and roll each into a round wrapper.
- Place a spoonful of filling in the center of each wrapper and seal tightly.
- Boil water in a pot and drop the dumplings in, covering the pot.
- Once the dumplings float, remove them with a strainer and serve hot with black vinegar.
