Instant Pot Artichokes

Ingredients

The artichokes

  • 2 whole medium artichokes

The flavoring

  • 2 slices lemon
  • 2 cloves garlic

The cooking liquid

  • 2 cups cold water

Instructions

  1. Rinse the artichokes under cold water and pat them dry.
  2. Remove any small petals from the base and cut away the stem.
  3. Trim the top 1 inch of the artichoke and the thorn tips off all petals using scissors.
  4. Rub the lemon slices all over the outside of the artichoke.
  5. Add the lemon slices, garlic, and water to the Instant Pot.
  6. Insert the trivet and stand the artichokes upright in the pot.
  7. Cook on Manual High Pressure for 12 minutes for small to medium artichokes or 14 minutes for large ones.
  8. After cooking, perform a Quick Release of the pressure and carefully remove the lid.
  9. Use tongs to take out the hot artichokes and serve with a dip of melted butter and mayonnaise if desired.
