Instant Pot Artichokes

Instructions
- Rinse the artichokes under cold water and pat them dry.
- Remove any small petals from the base and cut away the stem.
- Trim the top 1 inch of the artichoke and the thorn tips off all petals using scissors.
- Rub the lemon slices all over the outside of the artichoke.
- Add the lemon slices, garlic, and water to the Instant Pot.
- Insert the trivet and stand the artichokes upright in the pot.
- Cook on Manual High Pressure for 12 minutes for small to medium artichokes or 14 minutes for large ones.
- After cooking, perform a Quick Release of the pressure and carefully remove the lid.
- Use tongs to take out the hot artichokes and serve with a dip of melted butter and mayonnaise if desired.
