Instant Pot Artichokes

Instructions
- Remove the small outer leaves near the stem and slice the stem off to leave about ¼-inch.
- Cut the top 1-1 ½ inches off each artichoke to expose the inside.
- Snip the pointy ends off the remaining leaves with kitchen shears.
- Rinse the trimmed artichokes under cool water and pat dry.
- Rub the cut surfaces of the artichokes with lemon wedges, then place the wedges in the Instant Pot.
- Add 1 cup of water and 2 peeled cloves of garlic to the pot, then place the metal rack inside.
- Arrange the artichokes cut side up on the rack in a single layer.
- Lock the lid, set the valve to sealing, and cook at high pressure for 10 minutes.
- Quick release the pressure and check for doneness by inserting a knife into the stem.
- If needed, add more water and cook for a few more minutes.
