Ingredients

The artichokes

  • 4 pieces fresh artichokes

The seasoning

  • 1 piece lemon, cut into slices
  • 3 cloves garlic, peeled and lightly smashed
  • 1 cup water

Instructions

  1. Remove the small outer leaves near the stem and slice the stem off to leave about ¼-inch.
  2. Cut the top 1-1 ½ inches off each artichoke to expose the inside.
  3. Snip the pointy ends off the remaining leaves with kitchen shears.
  4. Rinse the trimmed artichokes under cool water and pat dry.
  5. Rub the cut surfaces of the artichokes with lemon wedges, then place the wedges in the Instant Pot.
  6. Add 1 cup of water and 2 peeled cloves of garlic to the pot, then place the metal rack inside.
  7. Arrange the artichokes cut side up on the rack in a single layer.
  8. Lock the lid, set the valve to sealing, and cook at high pressure for 10 minutes.
  9. Quick release the pressure and check for doneness by inserting a knife into the stem.
  10. If needed, add more water and cook for a few more minutes.
