Ingredients

The artichokes

  • 2–4 large fresh artichokes, trimmed

The steaming mixture

  • 1 cup water
  • 3 cloves garlic
  • 1 leaf bay leaf
  • 1 wedge fresh lemon

Dipping sauces

  • to taste dipping sauce (options include melted butter, hollandaise, tzatziki, mayo, or aioli)

Instructions

  1. Pour water, garlic, and bay leaf into the Instant Pot and place the steamer basket inside.
  2. Rub the lemon wedge on the artichokes and place them in a single layer in the steamer basket, adding the lemon wedge to the water.
  3. Close the lid and set the vent to 'Sealing'.
  4. Select 'Manual' and set the cooking time to 10 minutes (12 minutes for large artichokes).
  5. After cooking, perform a quick release by turning the vent to 'Venting'.
  6. Carefully remove the artichokes with tongs and serve with your preferred dipping sauce.
