Instructions
- Wash and dry the artichokes, then trim the stems to make the bases flat.
- Place the trivet in the Instant Pot and add 1 1/4 cups of water.
- Position the artichokes upside down on the trivet and lock the lid.
- Set the cooking time to 23 minutes on high pressure, using natural release for at least 10 minutes.
- In a bowl, mix mayonnaise, lemon juice, salt, and pepper to make the dipping sauce.
- Serve the artichokes warm with the dipping sauce on the side.
