Ingredients

The artichokes

  • 4 large artichokes
  • 1 1/4 cups water

The dipping sauce

  • ¼ cup mayonnaise
  • 1 lemon juiced
  • teaspoon salt
  • teaspoon freshly-ground black pepper

Instructions

  1. Wash and dry the artichokes, then trim the stems to make the bases flat.
  2. Place the trivet in the Instant Pot and add 1 1/4 cups of water.
  3. Position the artichokes upside down on the trivet and lock the lid.
  4. Set the cooking time to 23 minutes on high pressure, using natural release for at least 10 minutes.
  5. In a bowl, mix mayonnaise, lemon juice, salt, and pepper to make the dipping sauce.
  6. Serve the artichokes warm with the dipping sauce on the side.
