Baked Artichoke Dip

Ingredients

  • 2 cans water-packed artichokes
  • 4 ounces silken tofu
  • 3 large cloves garlic
  • ½ cup parmesan cheese
  • cup plain yogurt
  • cup mayonnaise
  • ¼ teaspoon fine grain sea salt
  • ¼ teaspoon cayenne pepper
  • to taste more grated cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a blender or food processor, puree the artichokes, tofu, and garlic.
  3. Add the grated cheese, yogurt, mayonnaise, salt, and cayenne to the blended mixture and stir until well combined.
  4. Pour the mixture into a baking dish and sprinkle the top with more grated cheese.
  5. Bake uncovered for about 45 minutes until heated through and the cheese starts to brown.
  6. If needed, use the broiler for the last few minutes to achieve browning.
