Pistachio Cherry Granola

Ingredients

  • 2 cups rolled oats
  • ½ cup sunflower seeds
  • 1 cup raw pistachio nuts
  • 2 tablespoons sesame seeds
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • ½ cup dried cherries

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet with nonstick spray or parchment paper.
  2. In a large bowl, combine all dry ingredients except for the dried cherries.
  3. In a separate bowl, mix olive oil and maple syrup, then pour over the dry ingredients and toss to combine.
  4. Spread the granola mixture evenly on the baking sheet.
  5. Bake for 10 minutes, remove and toss, then bake for another 10 minutes.
  6. Continue baking for an additional 5-10 minutes until golden brown.
  7. Remove from the oven and mix in the dried cherries.
  8. Allow the granola to cool for at least 20 minutes before serving.
