Pistachio Cherry Granola

Instructions
- Preheat the oven to 350ºF and prepare a baking sheet with nonstick spray or parchment paper.
- In a large bowl, combine all dry ingredients except for the dried cherries.
- In a separate bowl, mix olive oil and maple syrup, then pour over the dry ingredients and toss to combine.
- Spread the granola mixture evenly on the baking sheet.
- Bake for 10 minutes, remove and toss, then bake for another 10 minutes.
- Continue baking for an additional 5-10 minutes until golden brown.
- Remove from the oven and mix in the dried cherries.
- Allow the granola to cool for at least 20 minutes before serving.
