Ingredients

The granola base

  • ¼ cup virgin coconut oil
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ cup honey
  • ¼ cup water
  • 1 tablespoon vanilla extract
  • 4 cups whole oats
  • cups shredded coconut
  • 1 cup Rice Krispies cereal
  • ½ cup wheat germ

The mix-ins

  • 1 cup salted pistachios
  • 1 cup dark chocolate chips
  • 1 cup dried cherries

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with aluminum foil.
  2. Melt the coconut oil in a microwave-safe bowl and whisk in cinnamon, ginger, honey, water, and vanilla.
  3. In a large bowl, combine oats, 1 cup of coconut, Rice Krispies, and wheat germ.
  4. Drizzle the oil mixture over the oat mixture and toss to combine, then spread evenly on the baking sheet.
  5. Bake for about 45 minutes, stirring every 15 minutes until golden.
  6. Allow the granola to cool completely before adding the remaining coconut, chocolate chips, cherries, and nuts.
  7. Mix well and store in an airtight container.
