Instructions
- Preheat the oven to 300°F and line a baking sheet with aluminum foil.
- Melt the coconut oil in a microwave-safe bowl and whisk in cinnamon, ginger, honey, water, and vanilla.
- In a large bowl, combine oats, 1 cup of coconut, Rice Krispies, and wheat germ.
- Drizzle the oil mixture over the oat mixture and toss to combine, then spread evenly on the baking sheet.
- Bake for about 45 minutes, stirring every 15 minutes until golden.
- Allow the granola to cool completely before adding the remaining coconut, chocolate chips, cherries, and nuts.
- Mix well and store in an airtight container.
