Ingredients

The Base

  • 2 cups raw almonds, roughly chopped
  • 2 cups unsweetened coconut flakes
  • 1 cup raw walnuts, roughly chopped
  • 1 cup raw cashews, roughly chopped
  • ½ cup raw pepitas

The Sweeteners and Flavorings

  • ½ cup maple syrup
  • ¼ cup melted refined coconut oil
  • teaspoons vanilla extract
  • ½ teaspoon ground cardamom
  • ½ teaspoon Diamond Crystal kosher salt

Add-ins

  • ½ cup dried cherries
  • ½ cup dark chocolate chunks

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, cardamom, and salt.
  3. Stir in the nuts and seeds, ensuring they are evenly coated with the wet ingredients.
  4. Spread the mixture evenly on the baking sheet.
  5. Bake for 30-35 minutes, stirring halfway through for even browning.
  6. Allow the granola to cool completely, about an hour.
  7. Once cooled, break it into chunks and mix in the dried cherries and chocolate.
  8. Store in sealed containers for up to two weeks.
