Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, cardamom, and salt.
- Stir in the nuts and seeds, ensuring they are evenly coated with the wet ingredients.
- Spread the mixture evenly on the baking sheet.
- Bake for 30-35 minutes, stirring halfway through for even browning.
- Allow the granola to cool completely, about an hour.
- Once cooled, break it into chunks and mix in the dried cherries and chocolate.
- Store in sealed containers for up to two weeks.
