Ingredients

  • 1 ½ cups cashews (soaked)
  • 2 tbsp extra virgin olive oil
  • 1 cup fresh cilantro
  • 1 tbsp salt
  • 1 tbsp garlic powder or 2-3 large cloves
  • 2 tbsp nutritional yeast
  • 1 tsp cracked pepper
  • Juice of 1 ½ limes small
  • ½ cup cold water

Instructions

  1. Soak the cashews in cold water for 2 to 4 hours.
  2. Add all ingredients into a high-speed blender.
  3. Blend until smooth and creamy.
  4. Add more water if necessary for blending.
  5. Serve with pasta, orzo, tortilla chips, or fresh veggies.
