Ingredients

  • 1 cup raw unsalted cashews
  • ½ to ¾ cups water
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon salt

Instructions

  1. Soak the cashews in hot water for 15 minutes.
  2. Drain the cashews, reserving the soaking water.
  3. Blend the cashews with reserved water, lemon juice, olive oil, and salt until smooth.
  4. Add more reserved water as needed to achieve desired consistency.
  5. Store in an airtight container in the refrigerator.
