Instructions
- Soak the cashews in hot water for 15 minutes.
- Drain the cashews, reserving the soaking water.
- Blend the cashews with reserved water, lemon juice, olive oil, and salt until smooth.
- Add more reserved water as needed to achieve desired consistency.
- Store in an airtight container in the refrigerator.
