Ingredients

Main Ingredients

  • 2 cups cashews, raw
  • 1 cup water (plus more for soaking)
  • 1 small lemon, juiced

Optional Ingredients

  • 2 cloves garlic
  • a pinch sea salt
  • a pinch white pepper
  • 1 tablespoon agave or coconut palm sugar
  • 1 teaspoon vanilla

Instructions

  1. Soak the cashews in water for 3 hours or use the quick soak method for 15 minutes in boiling water.
  2. Drain the soaked cashews.
  3. Blend the cashews with lemon juice, 1 cup of fresh water, and any optional ingredients based on your preference.
  4. Process until the mixture is very smooth, scraping down the sides as necessary.
  5. Transfer the cashew cream to an airtight container and chill. It can be stored for up to 5 days.
