Ingredients

  • 1 cup raw cashews
  • 2 cups boiling water
  • to taste teaspoon salt or vanilla

Instructions

  1. Soak cashews in boiling water for 30 minutes.
  2. Drain the cashews and discard the soaking liquid.
  3. In a blender, combine the drained cashews and ½ cup of water.
  4. Blend until smooth, adding more water as needed for a creamy consistency.
  5. For a savory sauce, add an additional ½ cup water and season with salt.
  6. For a sweet coffee creamer, add an additional 1 cup water and vanilla extract to taste.
