Ingredients

The cream

  • 1 cup raw cashews
  • ½ cup water
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic
  • ½ teaspoon sea salt

For Cashew Sour Cream variation

  • 1 tablespoon white wine vinegar
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon onion powder

Instructions

  1. Blend the cashews, water, olive oil, lemon juice, garlic, and salt in a high-speed blender until smooth and creamy.
  2. For the sour cream variation, substitute 1 tablespoon of lemon juice with white wine vinegar and add mustard and onion powder.
