Ingredients

The meat mixture

  • 1 tablespoon coconut flour
  • ½ teaspoon Celtic sea salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon baking soda

Instructions

  1. Combine ground beef, egg, and minced shallot in a large bowl.
  2. Mix in tomato paste, Dijon mustard, coconut flour, salt, pepper, and baking soda.
  3. Use a ¼ cup scoop to form meatballs.
  4. Place meatballs on a parchment paper lined baking sheet.
  5. Bake at 350°F for 20-25 minutes, until the internal temperature reaches 175°F.
  6. Serve with marinara sauce over spaghetti squash or zucchini noodles.
