Instructions
- Combine ground beef, egg, and minced shallot in a large bowl.
- Mix in tomato paste, Dijon mustard, coconut flour, salt, pepper, and baking soda.
- Use a ¼ cup scoop to form meatballs.
- Place meatballs on a parchment paper lined baking sheet.
- Bake at 350°F for 20-25 minutes, until the internal temperature reaches 175°F.
- Serve with marinara sauce over spaghetti squash or zucchini noodles.
