Ingredients

  • 2 ½ cups peach slices (fresh or thawed from frozen)
  • 1 cup full-fat coconut milk
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Blend all ingredients in a blender until very smooth, adjusting sweetness if necessary.
  2. Pour the mixture into an ice pop mold and insert wooden sticks.
  3. Freeze for 6 hours or until solid.
  4. To remove the ice pops, submerge the molds in hot water for about 20 seconds.
  5. Store in a sealed container in the freezer until ready to serve.
