Creamy Peach & Honey Popsicles

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Toss the sliced peaches with 2 tablespoons of honey and a dash of salt, then arrange them in a single layer on the baking sheet.
- Roast the peaches for 30 to 40 minutes, stirring halfway, until they are soft and juicy.
- While the peaches roast, mix the yogurt, ¼ cup honey, lemon juice, and vanilla extract in a bowl and refrigerate to keep cool.
- After the peaches have cooled, combine them and their juices with the yogurt mixture, folding gently.
- Transfer the mixture into popsicle molds, pushing the peaches down if necessary, and insert sticks.
- Freeze the popsicles for at least four hours.
- To remove the popsicles, run warm water around the outside of the molds for about ten seconds and gently pull them out.
