Creamy Peach & Honey Popsicles

Ingredients

  • 1 pound ripe peaches
  • 6 tablespoons honey
  • 1 dash sea salt
  • 2 cups full fat/whole milk plain yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toss the sliced peaches with 2 tablespoons of honey and a dash of salt, then arrange them in a single layer on the baking sheet.
  3. Roast the peaches for 30 to 40 minutes, stirring halfway, until they are soft and juicy.
  4. While the peaches roast, mix the yogurt, ¼ cup honey, lemon juice, and vanilla extract in a bowl and refrigerate to keep cool.
  5. After the peaches have cooled, combine them and their juices with the yogurt mixture, folding gently.
  6. Transfer the mixture into popsicle molds, pushing the peaches down if necessary, and insert sticks.
  7. Freeze the popsicles for at least four hours.
  8. To remove the popsicles, run warm water around the outside of the molds for about ten seconds and gently pull them out.
