Drunken Shrimp

Ingredients

  • 2 tsp extra virgin olive oil
  • 2 tsp unsalted butter
  • 1 tsp anchovy paste
  • 1 lb peeled and deveined large or jumbo shrimp
  • 6 cloves garlic, chopped
  • 1 tsp crushed red pepper flakes
  • to taste none fresh pepper
  • ¼ cup white wine
  • 1 cup clam juice
  • 2 tbsp capers, rinsed
  • juice from one none lemon
  • generous handful none chopped parsley

Instructions

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add garlic and red pepper flakes, sauté for 1 to 2 minutes until golden.
  3. Add white wine, clam juice, lemon juice, capers, anchovy paste, parsley, salt, and pepper; stir and bring to a boil, cooking for 2-3 minutes.
  4. Add the shrimp and cook, stirring for 2-3 minutes until opaque, being careful not to overcook.
  5. Serve the shrimp with the sauce in a bowl and provide crusty bread on the side.
