Parmesan & Pepper Kale Pasta

Ingredients

The pasta

  • ½ lb pasta (any shape)
  • ½ cup chicken broth

The vegetables

  • 1 bunch kale (curly or lacinato)
  • 8 oz button mushrooms
  • 2 cloves garlic

The seasoning

  • 2 Tbsp butter
  • ½ tsp salt
  • ½ cup grated Parmesan
  • Freshly cracked to taste pepper

Instructions

  1. Mince the garlic and slice the mushrooms.
  2. Sauté the mushrooms and garlic in butter over medium heat until soft.
  3. Remove the stems from the kale and chop it into small pieces, then rinse well.
  4. Add the kale and chicken broth to the pot, stirring until the kale wilts.
  5. Let the kale simmer until most of the broth evaporates.
  6. Cook the pasta in boiling water until al dente, then drain.
  7. Remove the pot from heat and combine the pasta with the kale and mushrooms.
  8. Let the mixture cool slightly before adding salt, pepper, and Parmesan.
  9. Stir until everything is well coated and adjust seasoning as needed.
