Parmesan & Pepper Kale Pasta

The vegetables

kale (curly or lacinato)

button mushrooms

garlic
The seasoning

grated Parmesan

Freshly cracked
to taste

Instructions
- Mince the garlic and slice the mushrooms.
- Sauté the mushrooms and garlic in butter over medium heat until soft.
- Remove the stems from the kale and chop it into small pieces, then rinse well.
- Add the kale and chicken broth to the pot, stirring until the kale wilts.
- Let the kale simmer until most of the broth evaporates.
- Cook the pasta in boiling water until al dente, then drain.
- Remove the pot from heat and combine the pasta with the kale and mushrooms.
- Let the mixture cool slightly before adding salt, pepper, and Parmesan.
- Stir until everything is well coated and adjust seasoning as needed.
