Ingredients

  • 1 lb Lean Ground Beef (or 97% lean ground turkey)
  • 2 ½ Tbsp Homemade Taco Seasoning (or 1 (1 oz) packet store bought)
  • ½ tsp Onion Powder
  • 1 tsp Garlic Powder
  • 16 oz Salsa
  • 1 (4 oz) can Mild Diced Green Chiles (optional)
  • 3 cups Water (or low sodium broth)
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 12 oz Medium Shells (or 12 oz other shape pasta)
  • 1 (15 oz) can Corn Kernels (or 2 cups frozen kernels)
  • 2 cups Cheddar Cheese, shredded

Instructions

  1. 1. Sauté the ground meat until mostly cooked, adding olive oil if using turkey.
  2. 2. Stir in taco seasoning, onion powder, and garlic powder, and finish cooking the meat.
  3. 3. Add salsa, green chiles (if using), and broth, then let it simmer.
  4. 4. Stir in black beans and pasta, pressing the pasta down into the liquid.
  5. 5. Cancel the sauté setting.
  6. 6. Seal the pressure cooker lid and set to cook for 4 minutes.
  7. 7. After cooking, let the pressure release naturally for 1 minute, then do a controlled quick release.
  8. 8. Once the pressure is released, stir the pasta and add corn and cheese, mixing well.
  9. 9. Serve with optional garnishes like avocado, jalapeño, sour cream, tortilla chips, or cilantro.
