Ingredients

The meat

  • ½ lb uncooked 99% lean ground turkey breast
  • ½ lb uncooked 95% lean ground beef

The seasonings and sauces

  • 1 oz packet reduced sodium taco seasoning
  • 1 tablespoon taco sauce
  • 1 small onion, diced
  • 1 clove garlic, minced

The liquids

  • 3 cups reduced sodium beef broth
  • ½ cup water
  • 1 cup salsa

The pasta and vegetables

  • ½ cup frozen corn kernels
  • 12 oz uncooked medium-sized pasta

The dairy

  • 4 oz shredded 2% milk sharp cheddar cheese
  • ¼ cup queso blanco dip
  • 2 tablespoons light sour cream

Instructions

  1. Mist a large pot with cooking spray and heat over medium.
  2. Cook the ground turkey and beef, breaking it up until browned.
  3. Stir in taco seasoning and taco sauce, then add onion and cook until softened.
  4. Add minced garlic and cook until fragrant.
  5. Pour in beef broth, water, and salsa, scraping the pot's bottom.
  6. Add corn and pasta, stirring to combine, then bring to a boil.
  7. Reduce heat to simmer for 12-15 minutes, stirring occasionally.
  8. Once pasta is cooked and liquid is mostly absorbed, remove from heat.
  9. Stir in cheddar cheese, queso dip, and sour cream until melted and combined.
  10. Serve warm.
