Ingredients

Dry Ingredients

  • 1 medium carrot, peeled and finely grated (about ½ cup)
  • ½ cup rolled oats
  • 2 tbsp raisins
  • 1 tbsp walnuts
  • 1 tbsp chia seeds
  • 1 tbsp flaxseed meal

Wet Ingredients

  • ½ cup buttermilk
  • ½ cup whole milk (or other milk of your choice)
  • 1 tbsp blackstrap molasses
  • ½ tsp pure vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • pinch freshly ground nutmeg
  • pinch ground cloves
  • pinch salt (Himalayan salt recommended)

To Serve / Garnish

  • to taste more milk
  • to taste raisins
  • to taste chopped walnuts
  • to taste grated carrots

Instructions

  1. Combine all the dry ingredients in a medium-sized mixing bowl with a fitting lid.
  2. In a separate container, mix all the wet ingredients until well combined.
  3. Pour the wet mixture over the dry ingredients and mix everything together well.
  4. Cover and refrigerate for at least 4 hours, preferably overnight.
  5. When ready to eat, add more milk if desired and garnish with grated carrots, raisins, and chopped nuts.
