Ingredients

The base

  • 1 cup old-fashioned oats
  • ¾ cup unsweetened vanilla almond milk

  • cup grated carrot
  • ¼ cup plain Greek yogurt
  • 1 tbsp almond butter
  • 1 ½ tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tbsp honey or pure maple syrup
  • 1 tsp vanilla extract
  • tsp fine sea salt

Optional toppings

  • to taste healthy cream cheese frosting
  • to taste raisins
  • to taste chopped walnuts
  • to taste unsweetened shredded coconut

Instructions

  1. Combine all ingredients in a mixing bowl or large measuring cup and whisk together.
  2. Divide the mixture into two jars or containers.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Serve cold, topped with optional toppings like raisins, coconut, and almond butter or walnuts.
