Instructions
- Prepare arepas if not already done, which takes about 30 minutes.
- Preheat the oven to 400°F (209°C).
- Peel and slice the plantains diagonally into ½-inch pieces, toss with oil, and arrange on a baking sheet.
- Bake plantains for 15-20 minutes until golden brown, tossing halfway through.
- Heat the black beans in a saucepan over medium heat until bubbly, adding cumin and salt.
- Prepare guacamole by mashing the avocados and mixing in lime juice, salt, onion, and cilantro.
- Slice the arepas in half or create a pocket, then fill with guacamole, black beans, plantains, and any desired toppings.
