Ingredients

The Arepas

  • 6 large arepas

The Plantains

  • 2 large ripe and spotty plantains, peeled
  • 1 Tbsp oil (avocado preferred)

The Black Beans

  • 1 15-ounce can black beans, slightly drained
  • ½ tsp ground cumin
  • 1 pinch sea salt

The Guacamole

  • 2 ripe avocados
  • 2-3 Tbsp lime juice
  • ¼ tsp sea salt (plus more to taste)
  • ¼ cup diced onion
  • 2 Tbsp chopped cilantro

For Serving (optional)

  • cabbage
  • cilantro
  • Habanero Hot Sauce (or other hot sauce)

Instructions

  1. Prepare arepas if not already done, which takes about 30 minutes.
  2. Preheat the oven to 400°F (209°C).
  3. Peel and slice the plantains diagonally into ½-inch pieces, toss with oil, and arrange on a baking sheet.
  4. Bake plantains for 15-20 minutes until golden brown, tossing halfway through.
  5. Heat the black beans in a saucepan over medium heat until bubbly, adding cumin and salt.
  6. Prepare guacamole by mashing the avocados and mixing in lime juice, salt, onion, and cilantro.
  7. Slice the arepas in half or create a pocket, then fill with guacamole, black beans, plantains, and any desired toppings.
