Ingredients

The dough

  • 2 cups pre-cooked white or yellow cornmeal (masarepa)
  • 2 teaspoons kosher salt
  • 2 cups warm water
  • 1 tablespoon olive oil

Fillings (optional)

  • to taste vegan butter
  • to taste shredded vegan cheese
  • to taste black beans
  • to taste curtido
  • to taste slaw
  • to taste pulled jackfruit

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the cornmeal and salt.
  3. Slowly add the water while whisking or mixing with your hands until a soft, moist dough forms.
  4. Cover the bowl and let the dough rest for 8 to 10 minutes.
  5. Divide the dough into 8 equal portions and shape them into smooth discs about 2 ½ inches in diameter.
  6. Heat the oil in a skillet over medium heat and cook the arepas for 2 to 3 minutes on each side until golden brown.
  7. Transfer the arepas to a baking sheet and bake for 15 to 17 minutes until crispy on the outside.
  8. Serve hot with butter or your favorite fillings.
