Ingredients

  • 1 ¾ cups whole wheat pastry flour
  • cup organic cane sugar
  • 1 tbsp baking powder
  • ½ tsp fine sea salt
  • zest of 2 medium oranges
  • heaping ½ cup plain yogurt
  • ½ cup orange juice
  • cup avocado oil
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F and grease a muffin tin.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the yogurt, oil, orange juice, vanilla, and eggs. Stir in the orange zest.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Spoon the batter into the muffin cups, optionally sprinkling sugar on top.
  6. Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for another 10 minutes until a fork comes out clean.
  7. Let the muffins cool in the tin for 10 minutes before transferring to a wire rack.
