Nourishing Fluffy Orange Muffins

Instructions
- Preheat the oven to 425°F and grease a muffin tin.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the yogurt, oil, orange juice, vanilla, and eggs. Stir in the orange zest.
- Combine the wet and dry ingredients, mixing until just combined.
- Spoon the batter into the muffin cups, optionally sprinkling sugar on top.
- Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for another 10 minutes until a fork comes out clean.
- Let the muffins cool in the tin for 10 minutes before transferring to a wire rack.
