Instructions
- Preheat the oven to 400°F and prepare a muffin tin.
- Combine ground flax and water in a bowl and set aside.
- Mix both types of flour, baking powder, and salt in a medium bowl.
- Toss blueberries with a bit of the flour mixture to prevent sinking.
- In another bowl, combine the flax mixture, maple syrup, olive oil, yogurt, orange juice, orange zest, and vanilla.
- Fold the wet mixture into the dry ingredients until just combined, then add the blueberries.
- Fill the muffin tin ¾ full with the batter and bake for 16-18 minutes.
- Cool the muffins for 20 minutes before transferring them to a wire rack.
