Cranberry Orange Granola

Ingredients

  • 1 large orange (zest)
  • 2 tablespoons granulated sugar
  • 4 cups old-fashioned rolled oats
  • 1 ½ cups raw pecans
  • 1 teaspoon fine-grain sea salt
  • ½ teaspoon cinnamon
  • ½ cup melted coconut oil
  • ½ cup maple syrup or honey
  • 1 cup dried cranberries

Instructions

  1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. In a small bowl, combine the orange zest and sugar, rubbing the zest into the sugar until fragrant.
  3. In a large bowl, mix the oats, pecans, salt, cinnamon, and orange sugar.
  4. Add the coconut oil and maple syrup to the mixture and mix well.
  5. Spread the granola onto the prepared baking sheet in an even layer.
  6. Bake for 24 to 28 minutes, stirring halfway through, until lightly golden.
  7. Allow the granola to cool before mixing in the dried cranberries.
  8. Store in an airtight container at room temperature for 1 to 2 weeks or freeze for longer storage.
