Ingredients

The granola base

  • 2 cups old-fashioned oats
  • ½ cup raw almonds
  • ½ cup raw pecan halves
  • ½ cup shredded or shaved coconut
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract
  • ½ teaspoon salt

The mix-ins

  • cups dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Mix the oats, almonds, pecans, and coconut in a bowl.
  3. In another bowl, whisk together the maple syrup, melted coconut oil, cinnamon, vanilla, and salt.
  4. Combine the wet mixture with the dry ingredients and mix well.
  5. Spread the mixture on the baking sheet and bake for 25 minutes, stirring halfway.
  6. Let the granola cool to room temperature, then mix in the dried cranberries and white chocolate chips.
  7. Serve immediately or store in a sealed container for up to 2 weeks.
