Ingredients

The base

  • cups old-fashioned whole rolled oats
  • 1 cup whole almonds
  • cup dried cranberries
  • ½ or 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt

The binding and flavoring

  • ½ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 300°F (149°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix the oats, almonds, cranberries, cinnamon, and salt.
  3. Add the maple syrup, melted coconut oil, and vanilla extract to the dry ingredients and stir until well combined.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Bake for 30-35 minutes, stirring every 10 minutes, until golden brown.
  6. Allow the granola to cool completely before breaking it into clusters.
