Ingredients

The base

  • 3 cups old-fashioned whole rolled oats
  • ¾ cup almond flour or almond meal
  • ½ teaspoon salt
  • ¾ cup sliced, slivered, or chopped almonds

The sweeteners and fats

  • cup coconut oil
  • cup packed light or dark brown sugar
  • cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 300°F (149°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix the oats, almond flour, salt, and almonds.
  3. In a medium saucepan, combine coconut oil, brown sugar, and maple syrup over medium heat, whisking until the sugar dissolves. Remove from heat and stir in vanilla.
  4. Pour the mixture over the oat mixture and stir until combined.
  5. Press the mixture into the prepared baking pan evenly.
  6. Bake for 40 minutes, rotating the pan every 10 minutes.
  7. Remove from the oven and let cool for 5–10 minutes, then cut into squares and break into clusters.
  8. Return the clusters to the oven for another 10 minutes to crisp up.
  9. Cool completely before storing in an airtight container.
