Orange & Almond Granola

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix the orange zest and sugar in a small bowl, rubbing the zest into the sugar until fragrant.
- In a large bowl, combine oats, almonds, salt, cinnamon, and the orange sugar mixture.
- Add olive oil, honey, and vanilla to the dry ingredients and mix well.
- Spread the mixture onto the prepared baking sheet and bake for 19 to 23 minutes, stirring halfway through.
- Allow the granola to cool before mixing in the raisins and breaking it into chunks.
- Store in an airtight container at room temperature for 1 to 2 weeks or freeze for longer storage.
