Orange & Almond Granola

Ingredients

  • 2 teaspoons orange zest
  • 2 tablespoons sugar
  • 4 cups old-fashioned rolled oats
  • 1 ½ cups raw almonds
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ½ cup extra-virgin olive oil or melted coconut oil
  • ½ cup honey or maple syrup
  • 1 tablespoon vanilla extract
  • ¾ cup raisins

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the orange zest and sugar in a small bowl, rubbing the zest into the sugar until fragrant.
  3. In a large bowl, combine oats, almonds, salt, cinnamon, and the orange sugar mixture.
  4. Add olive oil, honey, and vanilla to the dry ingredients and mix well.
  5. Spread the mixture onto the prepared baking sheet and bake for 19 to 23 minutes, stirring halfway through.
  6. Allow the granola to cool before mixing in the raisins and breaking it into chunks.
  7. Store in an airtight container at room temperature for 1 to 2 weeks or freeze for longer storage.
