Fresh Orange Spice Low Sugar Granola

Ingredients

  • 3 oranges oranges
  • 2 tablespoons vegetable oil
  • cup almond butter
  • 2 tablespoons agave nectar
  • 1 teaspoon vanilla
  • 5 cups old-fashioned oats
  • ½ cup sliced almonds
  • ½ cup shredded, unsweetened coconut
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon cardamom
  • ½ teaspoon allspice
  • ½ cup golden raisins

Instructions

  1. Preheat the oven to 350°F.
  2. Zest and juice one orange, adding both to a microwaveable bowl.
  3. Add vegetable oil, almond butter, agave nectar, and vanilla to the bowl and microwave for 2 minutes, stirring to combine.
  4. In a large bowl, mix together oats, almonds, coconut, cinnamon, ginger, cardamom, and allspice.
  5. Pour the orange-almond butter mixture into the dry ingredients and stir well.
  6. Peel and slice the remaining two oranges, and mix them into the granola mixture.
  7. Spread the mixture evenly on a baking sheet and bake for about 20 minutes, stirring every 5 minutes until golden brown.
  8. Stir in the raisins and allow to cool, leaving uncovered for several hours to dry the oranges.
  9. Store in an airtight container and refrigerate.
