Ingredients

The salad

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ½ cup corn kernels
  • 1 each avocado, peeled, pitted and sliced
  • 1 cup black beans
  • ¼ cup cotija cheese, finely crumbled
  • cup tortilla strips

The dressing

  • cup olive oil
  • ¼ cup lime juice
  • 2 teaspoons honey
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ cup cilantro leaves, chopped
  • to taste salt
  • to taste pepper

Instructions

  1. Combine the chopped romaine lettuce, cherry tomatoes, red onion, corn, avocado, and black beans in a large bowl.
  2. In a separate small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, cilantro, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss gently to coat.
  4. Top the salad with cotija cheese and tortilla strips, then serve immediately.
