Ingredients

The salad

  • 5 cups chopped romaine lettuce
  • cup crumbled cotija cheese
  • ½ cup diced and seeded tomatoes
  • 1 cup canned black beans
  • ½ cup tortilla strips or crushed tortilla chips
  • 1 whole avocado
  • ¼ cup roasted and salted pepitas
  • to taste lime wedges
  • to taste cilantro leaves

The dressing

  • 1 whole canned mild green chile
  • 2 tablespoons roasted and salted pepitas
  • ½ teaspoon minced garlic
  • 3 tablespoons cotija cheese
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • cup olive oil
  • 1 tablespoon red wine vinegar
  • ¾ cup cilantro leaves
  • 3 tablespoons mayonnaise or sour cream

Instructions

  1. Blend all dressing ingredients until smooth, adding water if necessary.
  2. Taste and adjust seasoning with salt and pepper if needed.
  3. In a large bowl, combine lettuce, tomatoes, and beans.
  4. Add desired amount of dressing and toss to coat.
  5. Top with tortilla strips, cotija cheese, and avocado slices.
  6. Garnish with cilantro leaves and lime wedges if desired, then serve immediately.
