Ingredients

The salad

  • 2 heads romaine
  • 1 15oz can black beans
  • ½ bunch green onions
  • 1 mango
  • 1 bell pepper
  • 1 large tomato
  • ½ avocado

The dressing

  • ¼ cup Black Bean Hummus
  • ½ avocado
  • cup cilantro
  • 2 tbsp fresh lemon or lime juice
  • ½ cup water
  • 1 tbsp extra virgin olive oil
  • 1 tbsp pure maple syrup
  • ¼ tsp salt
  • ¼ tsp smoked paprika
  • Freshly ground pepper, to taste

Instructions

  1. Combine all salad ingredients in a large bowl and toss well.
  2. If serving immediately, add dressing and toss to combine. If saving for later, place salad in serving bowls and top with desired amount of dressing.
