Ingredients

  • 1 head romaine lettuce, chopped
  • 1 can black beans, low sodium, rinsed and drained
  • 1 medium tomato, chopped
  • 1 medium avocado, diced
  • 1 medium mango, diced
  • ½ medium red onion, diced
  • ½ cup fresh cilantro, chopped
  • 2 medium limes, juiced

Instructions

  1. 1. Place the chopped romaine lettuce on a plate.
  2. 2. Top the lettuce with black beans, tomato, avocado, mango, red onion, and cilantro.
  3. 3. Squeeze fresh lime juice over the salad.
  4. 4. Serve and enjoy! Optionally, warm the black beans if desired.
