Everyday Mexican Salad

Ingredients

The salad

  • 5 ounces mixed spring greens
  • 1 whole ripe avocado
  • ½ small red onion
  • 1 cup halved cherry tomatoes
  • cup roughly-chopped fresh cilantro
  • cup pepitas
  • ½ cup crumbled queso fresco or cotija cheese

The dressing

  • 3 tablespoons avocado oil or olive oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon freshly-cracked black pepper
  • 1 small clove garlic

Instructions

  1. Make the dressing by whisking all ingredients together in a bowl or shaking them in a mason jar until combined.
  2. Combine all salad ingredients in a large mixing bowl.
  3. Drizzle the dressing over the salad and toss until evenly combined.
  4. Serve immediately while fresh.
