Ingredients

The base

  • 1 15-ounce can coconut milk
  • 2 cups almond milk
  • 5 large egg yolks
  • cup maple syrup
  • ½ teaspoon ground cinnamon
  • 1 pinch salt
  • 2 bags chai tea
  • 1 teaspoon vanilla extract

Optional add-ins

  • 1.5 ounces bourbon, rum, or brandy

Instructions

  1. Combine coconut milk, almond milk, egg yolks, maple syrup, cinnamon, and salt in a large saucepan and whisk until combined.
  2. Heat the mixture over medium heat until it just reaches a simmer, stirring occasionally.
  3. Reduce heat to medium-low, add the tea bags, and simmer for 3 minutes.
  4. Remove and discard the tea bags, then stir in the vanilla extract.
  5. Taste and adjust sweetness with additional maple syrup if desired.
  6. For spiked eggnog, add bourbon, rum, or brandy as desired.
  7. Transfer to a heat-safe container and refrigerate for up to 3 days, serve chilled.
