Ingredients

The base

  • 2 cups coconut milk
  • 1 large egg yolk
  • ¼ cup honey or maple syrup
  • 1 tsp pure vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup coconut cream
  • cup egg whites
  • 1 tsp coconut sugar or brown sugar
  • 1 – 1.5 ounces rum (or ½ – 1 teaspoon rum extract for non alcoholic)

Optional toppings

  • to taste shaved or grated dark chocolate
  • to taste whipped cream

Instructions

  1. Blend the coconut milk, egg yolk, honey, vanilla, and spices until smooth.
  2. Transfer the mixture to a small pot and whisk on medium heat for about 10 minutes until it thickens, avoiding boiling.
  3. In a separate bowl, heat the coconut cream for about 30 seconds until warm.
  4. Add egg whites and sugar to the warm cream and beat until foamy peaks form.
  5. Blend the eggnog mixture again until slightly frothy.
  6. Pour 1 cup of the eggnog into each glass, adding 1-2 tablespoons of rum if desired.
  7. Top each glass with coconut cream foam and any optional toppings.
  8. Serve hot.
