Dairy-Free Eggnog

Instructions
- Puree the egg yolks and coconut milk in a blender and set aside.
- In a pot, combine almond or hemp milk, another can of coconut milk, coconut sugar, vanilla extract, cinnamon, nutmeg, and allspice.
- Bring the mixture to a simmer.
- Slowly ladle some of the hot liquid into the egg yolk mixture while whisking constantly.
- After incorporating about a cup of the hot liquid, transfer the yolk mixture back to the pot.
- Whisk while simmering for about three minutes.
- Remove from heat and serve or refrigerate for later.
