Ingredients

The eggnog

  • 3 cups dairy-free milk
  • 1 14-oz can full-fat coconut milk
  • 4-6 Tbsp maple syrup
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp pure vanilla extract
  • tsp ground cardamom (optional)

For serving (optional)

  • 1 ounce bourbon (per 8-ounce serving)
  • to taste coconut whipped cream
  • to taste cinnamon or nutmeg

Instructions

  1. Optional: Soak nuts overnight in cool water or cover with hot water for 1 hour, then drain and rinse.
  2. In a high-speed blender, add dairy-free milk, coconut milk, maple syrup, cinnamon, nutmeg, vanilla extract, and optional cardamom.
  3. Blend on high until creamy and smooth, about 1-2 minutes. Adjust flavor with more spices or syrup as needed.
  4. Serve cold, over ice, or warm. Optionally add bourbon per serving.
  5. Store leftovers in a jar in the refrigerator for up to 4-5 days.
