Ingredients

The base

  • 2 ¾ cups non-dairy milk of choice
  • 1 can (13 oz) full-fat coconut milk
  • 2 tablespoons maple syrup
  • 3 tablespoons brown sugar (or coconut sugar)

The spices

  • ¼ teaspoon nutmeg
  • ¼ teaspoon cardamom
  • ¾ teaspoon cinnamon
  • 1 ½ teaspoons vanilla extract

Optional additions

  • 1 ounce bourbon or rum (per serving)
  • to taste whipped cream
  • to taste cinnamon

Instructions

  1. Add all ingredients to a high-speed blender.
  2. Blend on high speed for 1-2 minutes until smooth.
  3. Taste and adjust spices and sweetness as needed.
  4. Transfer to a large glass jar and refrigerate for up to 4 days.
  5. For a boozy option, add 1 ounce of bourbon per cup of eggnog.
  6. Enjoy chilled, over ice, or warm.
