Vegan Eggnog

Ingredients

The base

  • 3 cups almonds
  • 4 cups water

The flavorings

  • 1 tablespoon vanilla extract
  • 2 tablespoons agave nectar
  • 2 tablespoons yacon syrup
  • 2 teaspoons ground nutmeg
  • ΒΌ teaspoon ground cinnamon
  • pinch ground cloves

Instructions

  1. Soak the almonds overnight.
  2. Discard the soaking water and rinse the almonds until the water is clear.
  3. Blend the soaked almonds with 4 cups of water in a Vitamix on the highest speed for 90 seconds.
  4. Strain the mixture through a fine mesh strainer, discarding the solids.
  5. Place the almond milk in a 2-quart mason jar.
  6. Add vanilla, agave, yacon, nutmeg, cinnamon, and cloves to the jar and shake well.
  7. Refrigerate until cold and serve.
